  1. Banana Cream Cake with Strawberry Cream Filling

  2. 3 c sifted flour

  3. 1 tb baking powder

  4. 1 ts salt

  5. 1/2 ts almond extract

  6. 1 1/2 ts vanilla

  7. 1/2 ts banana extract

  8. 1 1/2 c sugar

  9. 2 c heavy cream

  10. 1/3 c sugar

  11. 1/3 c water

  12. 4 tb creme de banana

  13. 1 1/2 c whipping cream

  14. 3/4 c mashed fresh strawberries

  15. 1 ts grand Marnier

  16. 3 tb powdered sugar

  17. 1 lg banana, sliced

  18. Sift together flour, baking powder and salt; set aside. Beat eggs

  19. until light and foamy. Add flavorings. Add sugar gradually. Add

  20. flour mixture alternately with cream, beating after each addition

  21. until just smooth. Pour batter into two 9" greased round cake pans

  22. 350 degree oven

  23. 40 minutes or until done.

  24. Cool on racks and then brush with Simple Syrup.

  25. Combine sugar and water in a heavy small saucepan. Bring to a boil

  26. over moderate heat, stirring constantly until sugar is dissolved.

  27. Remove from heat and cool to room temperature. Stir in creme de

  28. banana.

  29. Whip cream in large chilled bowl on low speed until soft peaks

  30. form. Add Grand Marnier and sugar and beat on high speed until

  31. spreading consistency. Fold in mashed strawberries. Spread this

  32. mixture between layers and add sliced banana on top of bottom layer.

  33. Add remaining mixture on top and sides of cake.
