  1. 1 cup(s) long-grain white rice

  2. 2 slice(s) bacon , cut into 1/2-inch pieces

  3. 1 small onion , chopped

  4. 2 stalk(s) celery , sliced

  5. 1 green pepper , chopped

  6. 2 clove(s) garlic , finely chopped

  7. 2 teaspoon(s) Cajun seasoning

  8. 1/2 teaspoon(s) dried thyme

  9. 1/4 teaspoon(s) salt

  10. 2 1/2 cup(s) Home-Cooked Beans , plus

  11. 1 1/2 cups bean cooking water

  12. 1/4 teaspoon(s) cayenne pepper sauce

  1. Prepare rice as label directs.

  2. Meanwhile, in 12-inch nonstick skillet, cook bacon on medium until browned. With slotted spoon, transfer bacon to paper towels to drain.

  3. To bacon fat in skillet, add onion, celery, green pepper, garlic, Cajun seasoning, thyme, and salt. Cook 10 to 12 minutes or until vegetables are tender, stirring occasionally. Stir in beans and reserved bean cooking water, bacon, and cayenne pepper sauce. Cook 3 to 5 minutes longer to blend flavors.

  4. Serve bean mixture over rice.
