  3. 3 carrots peeled and grated

  4. 1 onion peeled and grated

  5. 1 Tablespoon oil

  6. salt and pepper to taste...a little more -- at

  1. Combine potatoes, carrots and onion in medium bowl and mix well. Saltand pepper to taste. Heat oil in skillet. Dump potato mixture and forminto a large pancake. Cook until browned on one side and then flip overand repeat. Serve cut into wedges or just breat it up. Can be servedplain or with applesauce or sour cream. Yummy and pretty too.
