  1. 6 donut peaches, washed, unpeeled, ripe but firm (about 12 ounces)

  2. 1 tablespoon canola or vegetable oil

  3. 1 tablespoon fresh lime juice

  4. 1/4 cup diced red bell pepper

  5. 1/4 cup diced green bell pepper

  6. 1/4 cup finely chopped red onion

  7. 1 tablespoon chopped fresh cilantro

  8. 1 teaspoon minced jalapeno

  9. 1/2 teaspoon salt

  10. 1/8 teaspoon crushed red pepper flakes Freshly ground pepper to taste

  1. Cut peaches in half to remove pits, then cut into 1/2 inch dice. In a large bowl, combine oil and lime juice. Add diced peaches, red and green bell peppers, red onion, and cilantro; mix well. Add jalapeno, 1/2 teaspoon at a time, to desired spiciness. Add salt, red pepper flakes, and black pepper to taste. Mix again; cover and refrigerate until ready to serve.
