  9. 12 oz Penne or ziti

  10. 1 1/2 c Chopped onion

  11. 3 Minced cloves garlic

  12. 3 c Chopped plum tomatoes

  13. 1/2 c Water or stock

  14. 1/2 ts Salt

  15. 1/2 ts Sugar

  16. 2 c Broccoli florets

  17. 2 c Chopped zucchini

  18. 1 c Sugar snaps (remove string)

  20. Snow peas or reg. peas

  21. 1 c Jullien carrots

  22. x Herbs: Basil, Fines Herbs*

  23. Or Italian Seasoning

  24. x Salt & Pepper to taste

  25. 1/2 c Grated Parmesan (Soy or FF)

  26. Cook the pasta according to directions on the package;

  27. drain. While the pasta is cooking, heat some

  28. cooking liquid over medium-high heat in a 3-quart

  29. saucepan. Add the onion and garlic, (I also saute

  30. shoestring carrot strips, like a cups worth which

  31. makes it sweeter!) and cook, stirring, until softened.

  32. Add the tomato (make sure these are nice ripe plum

  33. tomatoes for best result!), water,salt and sugar.

  34. Cook, stirring often, for 10 minutes. Add the

  35. broccoli, zucchini, sugar snaps, carrot and parsley.

  36. (Actually, put in any vegetables you want ... I often

  37. just put in frozen peas in a pinch) Cook, stirring

  38. until the vegetables are tender-crisp. Stir in the

  39. Parmesean. Serve over the pasta. Substitute soy

  40. parmesan if you are dairy free but don't leave the

  41. parmesan out!

  42. Fines Herbs is a combination of herbs that is

  43. similar to Italian Herb Seasoning but it is lighter on

  44. the oregano. I prefer it to Italian Herb Seasoning.
