  1. 125g organic egg noodles

  2. 2 small chicken breasts

  3. 1tbsp oil

  4. 1tbsp soy sauce

  5. 1tsp minced ginger

  6. 1tsp minced garlic

  7. 6 spring onions, chopped

  8. 85g Shiitake mushrooms, halved

  9. 100g broccoli, split into small florets

  1. Cook organic egg noodles according to the packet instructions, drain and set aside.

  2. Heat oil in a wok and fry chicken breasts, cut into chunks.

  3. Add soy sauce, minced ginger, minced garlic, spring onions, shiitake mushrooms and broccoli and stir fry for 1-2 mins.

  4. Toss with the noodles and stir fry for 1 min to heat through.
