  1. 2 tablespoons olive oil

  2. 2 red onions, sliced

  3. 2 chorizo sausage

  4. 2 x 400g chickpeas

  5. 2 x 400g tinned tomatoes

  6. 3 cups chicken stock

  7. 1 red capsicum, coarsely chopped

  8. 1 cup dry white wine

  9. 2 teaspoons smoked paprika

  10. salt to taste

  1. Add oil to hot camp oven. Add onions and cook until tender.

  2. Add chorizo sausages and brown.

  3. Rinse chickpeas and add to onions and sausages. Add tomatoes and stir through.

  4. Add chicken stock, capsicum and white wine.

  5. Add smoked paprika and salt to taste, simmer for 20 minutes, stirring occasionally.
