  1. 1/4 cup milk

  2. 1/2 cup sugar

  3. 1 1/4 teaspoons kosher salt

  4. 1/2 cup unsalted butter

  5. 2 packages active dry yeast or 2 (0.6 oz.) fresh yeast cakes

  6. 1/3 cup warm water

  7. 3 egg s, room temperature

  8. 5 1/2 to 6 1/2 cups flour

  9. If using fresh yeast cakes, increase water to 1/2 cup.

  1. Place milk, sugar, salt, and butter in a small saucepan. Heat over low heat until butter melts and sugar dissolves. Cool to lukewarm. Dissolve yeast in warm water in a warmed mixer bowl. Add lukewarm milk mixture, eggs, and 5 cups flour. Attach bowl and dough hook to stand mixer. Turn to speed 2, add remaining flour, ½ cup at a time, and mix for 2 minutes, or until dough clings to hook and cleans sides of bowl. Knead on speed 2 for 2 more minutes.

  2. Place dough in greased bowl, turning to coat sides and top. Cover and let rise for 1 hour, or until doubled in size. Punch down and shape as desired for rolls or cinnamon buns.
