  7. 3 eggs, separated

  8. 1 teaspoon vanilla extract

  9. 1 prebaked 9-inch pie crust

  10. 1/4 teaspoon cream of tartar

  1. Preheat oven to 350 degrees.

  2. In a medium bowl, beat together the 3/4 cup sugar, cocoa, cornstarch, and salt Slowly mix in the milk, Pour into a saucepan and heat on medium. Stir constantly until thick and just started to bubble.

  3. Turn heat down to low and stir for 2 more minutes more.

  4. Pour 1 cup of mixture into a separate bowl and blend in the egg yolks.

  5. Pour back into saucepan and bring to a boil for 2 minutes while stirring.

  6. Remove from stove and add vanilla.

  7. Pour mixture into pie crust.

  8. In another bowl, mix the egg whites with tartar until peaks start forming.

  9. Slowly add 6 tablespoons of sugar.

  10. Beat until firm.

  11. Pour over pie, letting the meringue spread across the entire pie.

  12. Bake for 15-20 minutes.
