  1. OATMEAL WALNUT BURGERS Makes about 10 vegi-burgers.

  2. 2 1/2 cups rolled oats

  3. 2 cups walnut pieces

  4. 1/2 cup soya flour

  5. 3 eggs

  6. 2 medium onions, chopped

  7. 1 small can (156 ml or 5 1/2 oz) tomato paste

  8. 1/4 cup water

  9. 1/2 teaspoon marjoram

  10. 1/2 teaspoon ground black pepper

  11. Put everything, except the walnuts and onions, into a food processor and mix thoroughly. Next, add the onions and walnuts, and blend

  12. just long enough to mix them in. Then add enough extra water to

  13. make a suitable burger consistency.

  14. Take 1/2 cup at a time, and form the mixture into burger patties.

  15. Grill the patties on a BBQ, or fry them in a lightly oiled pan.

  16. Serve with beans, salad, sliced cheese, and whole grain bread.

  17. Variations:

  18. Use other types of nuts (unsalted).

  19. Replace the onions with chopped peppers or mushrooms.

  20. Replace the marjoram with 1 teaspoon sage.

  21. Replace the tomato paste with 1/2 cup milk.
