  1. 3 cups tightly packed finely sliced spinach -- (i use frozen, -- thawed)

  2. 1 cup freshly grated coconut

  3. 2 cloves garlic -- chopped, up to

  4. 3 2 shallots -- chopped (i use -- ordinary onions), -- up to

  5. 3 2 green chiles -- chopped (i've used -- various kinds of -- hot stuff)

  6. 1/2 inch fresh ginger -- grated

  7. 1/2 teaspoon salt

  8. 1/4 teaspoon cayenne

  9. 1 teaspoon turmeric

  1. Preparation : Steam or thaw spinach and saute lightly. Blend remaining ingredients to a fine paste adding a little water and add this paste to the spinach. Heat through and serve. To round out into a main dish I plunk a poached egg on top. Source: Estela
