  1. 2 cups long grain white or basmati rice

  2. 3 Tbsp Olive oil

  3. 1 teaspoon minced garlic

  4. 1 teaspoon salt

  5. 1 teaspoon dried thyme

  6. 1 tablespoon cumin

  7. 1 tablespoon coriander

  8. 1 bay leaf

  9. 1 lg. onion chopped

  10. 3 c. chicken stock

  11. 2 Cans black beans

  12. 8 oz hot or mild bulk sausage (cooked and crumbled)

  1. Saute onions in olive oil until they are translucent. Add all dry spices except bay leaf. Add white rice and saute to bring out flavors. Add cooked sausage and mix well. Add chicken stock and bring to a boil. Add bay leaf. Cover and simmer for 20 minutes. Add black beans, mix well and serve.
