  1. Ingredients (serves 16)

  2. 1 1/2 cups (140g) toasted muesli

  3. 1 cup (150g) plain flour

  4. 1 cup (220g) raw sugar

  5. 1/2 cup (45g) desiccated coconut

  6. 1 cup (100g) walnuts, coarsely chopped

  7. 1 cup (150g) pitted dates, coarsely chopped

  8. 100g butter

  9. 2 tbs golden syrup

  10. 1 tbs hot water

  11. 1/2 tsp bicarbonate of soda

  12. 1 egg, lightly whisked

  1. Preheat oven to 180C. Grease and line the base and sides of a 19 x 29cm slices pan with baking paper, allowing the sides to overhang.

  2. Combine the oats, flour, sugar, coconut, walnuts and dates in a large bowl.

  3. Combine the butter, golden syrup and water in a small saucepan over low heat. Cook, stirring occasionally, for 2-3 minutes or until butter melts and mixture is smooth. Remove from heat. Add the bicarbonate of soda and stir to combine. Add to the oat mixture with the egg and stir until well combined. Spoon into the prepared pan and smooth the surface with the back of a spoon.

  4. Bake in preheated oven for 30 minutes or until golden brown and firm to the touch. Remove from oven. Set aside for 15 minutes to cool slightly before turning onto a wire rack to cool completely. Cut into squares to serve.
