  1. 1 c All purpose flour

  2. 1 ts Baking soda

  3. 2 ts Baking powder

  4. 1 ts Cinnamon powder

  5. 1/2 ts Salt

  6. 3/4 c Vegetable oil

  7. 1 c White sugar

  8. 2 c Grated carrots

  9. 1/2 c Chopped walnuts

  1. Sift & mix the flour, baking soda, baking powder, cinnamon & salt.

  2. Add the oil & sugar.

  3. Mix well.

  4. Stir in the carrots & walnuts.

  5. Enusre that all is well mixed.

  6. Transfer to a greased cake tin approx.

  7. cm X 20 cm.

  8. Bake at 350F for about an hour or until a knife inserted in the centre of the cake comes out clean.

  9. Cool for a few minutes on a wire rack.

  10. Turn out & let cool completely.
