  1. 1 (17 1/3-ounce) package frozen puff pastry, thawed

  2. 4 teaspoons granulated sugar

  3. 2 Granny Smith apples, peeled, cored and sliced paper thin

  4. 1 tablespoon butter, cut into small bits

  5. 1/4 cup apricot jam, heated, optional Vanilla ice cream, softened, for serving, optional

  1. Preheat oven to 425 degrees F. With a 6-inch round plate as a guide, using a sharp knife or pizza wheel, cut 4 rounds out of the puff pastry. Place the rounds on a large baking sheet lined with parchment paper and use a fork to prick the center of each pastry round, leaving a º-inch border all the way around. Do not prick the edges. Sprinkle each round with ? teaspoon sugar.

  2. Arrange apple slices in overlapping rows across the circles. Sprinkle each tart with ? teaspoon sugar and dot each with some butter.

  3. Bake 15 minutes, or until the edges are puffed and golden. Brush each tart with warm apricot jam, if desired. Serve immediately with vanilla ice cream, if desired.
