  1. 1 cup white wine

  2. 3/4 cup heavy cream

  3. 1 shallot, finely diced

  4. 1 whole vanilla bean, split in half

  5. 1 stick sweet butter (1/4 pound)

  6. Salt and white pepper

  1. Combine the wine with the diced shallot and split vanilla bean.

  2. Place the ingredients in a saucepan and reduce mixture by half.

  3. Add the cream and reduce again by half, remove the bean and set aside.

  4. Reduce heat and whisk the butter in small pieces into the reduction until it thickens.

  5. Season with salt and pepper to taste.

  6. Be careful not to boil the sauce, as this will separate it.

  7. Scrape the seeds out of the vanilla bean.

  8. Add the seeds to the sauce and serve
