  1. 3 lg Dried shiitake mush-

  2. 1 ts Salt

  3. 1 1/2 ts White vinegar

  4. Small strips

  5. 3 oz Canned beats, cut in

  6. 1-1/2 inch pieces 1 Stalk celery, cut into 1 Avocado, cut into 1/2-inch

  7. Cubes Peeled, cut into 1/2-inch

  8. 6 oz Long island potato,

  9. 6 Baby corn, cut into 1/2-inch

  10. Rooms

  11. 1 tb Salad oil

  1. Time does not include soaking mushrooms.

  2. Soak mushrooms in water for 12 hours.

  3. Cut into 1/4-inch strips.

  4. Boil and drain.

  5. Add corn pieces to cold water in saucepan.

  6. Bring to a boil and cook one minute.

  7. Drain.

  8. Add potatoes to water in another saucepan and cook 10 minutes, or until soft.

  9. Combine all vegetables.

  10. Add vinegar, salt, and salad oil.

  11. Divide mixture into 6 small bowls and pour Tofu Dressing over the salad.
