  5. 1 1/2 ea Stalks lemon gress

  6. 6 ea Shallots, peeled

  7. 5 ea Garlic cloves, peeled

  8. 3 tb Fresh coriander leaves

  9. 1 tb Hot chilli sauce

  10. 2 ts Cumin seeds

  11. 1/4 ts Turmeric

  12. 1 tb Water

  13. 1/3 c Oil

  14. 1 ts Dried shrimp paste

  15. 2 c Coconut milk

  16. 1 tb Brown sugar

  17. 1/4 ts Salt

  18. 3/4 c Gr rst unsalted sk peanuts

  19. Peel course outer layer from lemon grass, and remove tough tops. (Save

  20. 1 inch

  21. lengths. Place in workbowl of food processor with shallots, garlic,

  22. coriander, hot chili sauce, cumin seeds and turmeric. Whirl to a fine

  23. paste, adding water if needed. In a large frying pan over medium setting ,

  24. heat oil, add lemon grass paste and dried shrimp paste, stirring and frying

  25. for about 4 minutes or until mixture emits a wonderously aromatic perfume.

  26. Stir in about half the coconut milk and continue cooking, stirring almost

  27. constantly, for 8 minutes. Stir in remianing coconut milk, sweeten with

  28. sugar and season with salt. Blend in peanuts. Taste at this point to adjust

  29. sweetening, salt, and hotness. Thin with more coconut milk or water if

  30. desire. --
