  1. Tuna au Poivre

  2. 2 tb soy sauce

  3. 3 tb lime juice

  4. 1 md clove garlic; peeled and put through a press

  5. 3/4 ts sugar

  6. 1 lb fresh tuna

  7. 2 To 3 teaspoons coarsely ground black pepper

  8. Combine the soy sauce, lime juice, garlic and sugar. Put the tuna

  9. into a glass dish and pour the marinade over the fish. Marinate

  10. 1-2 hours in refrigerator.

  11. Remove the fish from the marinade, discard marinade and place on

  12. a rack (or broiling pan) in a foiled lined pan. Sprinkle the pepper

  13. on top of the fish, patting gently to adhere. Bake in a preheated

  14. 450-degree oven until cooked through..
