  1. 500 g good quality dark chocolate

  2. 125 g diced butter

  3. 285 ml milk

  4. 250 g caster sugar

  5. 5 egg yolks

  1. Put the chocolate and butter into a bowl. In a separate bowl, whisk the egg yolks lightly.

  2. Put the milk into a pan with the sugar. Bring gently up to the boil, then pour onto the egg yolks, whisking constantly.

  3. Return the mixture to the pan and, over a very gentle heat, stir constantly until the custard thickens enough just to coast the back of the spoon.

  4. Strain the custard onto the chocolate then stir until melted and glossy. Pour the mixture into a cling film lined loaf tin and put in the fridge for at least 2 hours to set.

  5. Once set, cut into slices using a warm, wet, sharp knife and serve with sliced strawberries and a little sliced mint.
