  1. 1 lb 454g / 16oz Flaked crabmeat

  2. 1 Jalapeno peppers - (1 pound 11 ounces)

  3. 2 tablespoons 30ml Green pepper - finely chopped

  4. 2 tablespoons 30ml Onions - finely chopped

  5. 1/4 cup 59ml Cracker meal

  6. 1 Egg - beaten

  7. 1/4 teaspoon 1 1/3ml Black pepper

  8. 1/8 teaspoon 0.6ml Cayenne pepper

  9. 1 Garlic - minced

  10. 1/4 cup 59ml Milk breading mixture

  11. 2 cups 474ml Cracker meal

  12. 1 cup 237ml Milk

  13. 2 Eggs

  14. 1/4 teaspoon 1 1/3ml Salt

  15. 1/4 teaspoon 1 1/3ml Pepper

  1. 325º Deep Fryer Cut peppers in half lengthwise. Discard pulp and seeds and rinse carefully. In a large mixing bowl, combine remaining ingredients except breading mixture. Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside.

  2. To prepare Breading Mixture, place cracker meal in a flat pan, mix together milk, eggs and salt and pepper. Dip peppers in egg mixture, then in cracker meal. Repeat procedure. Deep fry at 365º until golden brown. Drain on absorbent paper.
