  1. Minted Vegetable Salad

  3. 2 large tomatoes, chopped

  4. 1 medium red bell pepper, chopped

  5. 1 large cucumber, chopped

  6. 1 bunch green onions, sliced

  7. 1 cup chopped fresh parsley

  8. 1/3 cup chopped fresh mint

  9. 1/2 cup radishes, chopped

  10. 1/3 cup ripe olives, sliced

  11. 2 cloves garlic, pressed

  12. 2 tablespoons olive oil

  13. 1/4 cup lemon juice

  14. 1/2 teaspoon pepper

  15. salt to taste

  16. lettuce leaves

  17. Combine all ingredients except lettuce leaves. Cover and chill

  18. for at least 1 hour or overnight. Serve on lettuce leaves.
