  1. We serve this cheesy, garlicky spinach dip with pieces of warm crusty bread.

  2. Makes about 1 2/3 cups of dip.

  3. 90g baby spinach leaves

  4. 80g cream cheese, softened

  5. 100g (1 cup) grated cheddar cheese

  6. 100g (1 cup plus 2 tablespoons) grated Parmesan cheese

  7. 100g (1/3 cup plus 1 tablespoon) mayonnaise

  8. 2 cloves garlic, peeled and crushed

  9. 1 large eschallot/green onion, chopped (use white and green parts)

  10. 1 teaspoon (5ml) lemon juice or white vinegar
