  1. 3 lbs 1362g / 48oz Shad - whole, dressed

  2. 1/2 cup 118ml Lemon juice

  3. 1/4 cup 59ml Olive oil

  4. 1 teaspoon 5ml Garlic salt

  5. 3/4 teaspoon 3.8ml Dried oregano - crushed

  6. 1/2 teaspoon 2 1/2ml Freshly-ground black pepper

  1. Recipe Instructions Combine lemon juice, olive oil, garlic salt, oregano and pepper. Make 4 to 5 shallow slits with a sharp knife on each side of the fish. Brush sauce on both the inside and outside of the fish. Place fish in a well-greased, hinged wire grill rack. If you do not have a rack fish can be put on foil on the grill. Cook about 4 inches from moderately-hot coals or heat for 5 to 8 minutes. Baste with sauce, turn, and cook for an additional 5 to 8 minutes or until fish begins to flake easily when tested with a fork. This recipe yields 6 servings.
