  1. 1 1/2 cups whole wheat flour

  2. 1/4 cup wheat germ

  3. 1/3 cup sugar

  4. 1 teaspoon cinnamon

  5. 2 teaspoons baking powder

  6. 1/2 teaspoon baking soda

  7. 1/4 teaspoon salt

  8. 1/4 cup oil

  9. 1/4 cup soy milk

  10. 3/4 teaspoon vanilla

  11. 1 cup canned pumpkin

  12. 1/2 cup chopped walnuts

  1. Preheat oven to 350 degrees. In a large mixing bowl, stir together flour, wheat germ, sugar, cinnamon, baking powder, baking soda and salt. In a medium mixing bowl, combine canola oil, soy milk, vanilla and 1 cup canned pumpkin. Add wet ingredients to dry ingredients and mix until thoroughly combined into a thick batter. Pour batter into a nonstick loaf pan. Spread walnuts on top of batter and bake 45-50 minutes, or until a toothpick inserted comes out clean. Cool 10 minutes in pan then transfer to a cooling rack and cool completely before cutting.
