  1. 2 tomato (peeled and chopped)

  2. 2 green chili peppers (chopped into small pieces)

  3. 1 teaspoon salt

  4. 1/2 lb. sliced mushrooms

  5. 2 green peppers (chopped into small pieces)

  6. Black pepper and other spices to taste

  7. 2 oz. vegetable oil

  8. 2 large onions (chopped into small pieces)

  9. 2 cloves of garlic (chopped into small pieces)

  10. 2 cups of sour cream

  11. 4 oz. cheddar cheese, shredded

  12. 8 tortillas

  1. Directions Step1. Heat the oil in a skillet and sauté the onions until tender.

  2. Step2. Add the garlic, mushrooms, and green pepper. Cook for 4 minutes and stir in between.

  3. Step3. Add the tomatoes, chili pepper, salt, pepper, and other spices and bring to a boil.

  4. Step4. Reduce heat and simmer for 3 minutes, stir in the sour cream, and remove from the heat.

  5. Step5. Divide half the mixture among the 8 tortillas, roll each one up, place them in a shallow baking dish.

  6. Step6. Pour remaining sauce over the top and sprinkle with the cheese.

  7. Step7. Bake at 400 degrees for 12 minutes or until done.
