  1. 1 ea Herring

  2. 2lb. scaled boned &

  3. 1" diagonally cut -pieces

  4. 1 c Water

  5. 2 c Cider vinegar

  6. 3/4 c Sugar

  7. 5 ea Dried hot peppers

  8. 5 ea Bay leaves

  9. 2/3 c Black olives pitted chopped

  10. 2 t Coriander seeds

  11. 1 1/2 t Mustard seeds

  12. 1 ea Carrot lg. scraped cut into 1/8" thick rounds

  13. 1 ea Onion lg. sliced thin

  14. 30 ea Black peppercorns

  15. 2 large Mason jars layer the remaining ingredients. Be sure to distribute the spices evenly throughout the layers. Pour the mainade evenly over the contewnts of each jar. Screw the lids on tightly, place into the refrigerator for 5-7 days.
