  1. Sauerkraut Relish:

  2. 1/4 cup white vinegar

  3. 3 tbsp. brown sugar

  4. 224 g can sauerkraut, drained

  5. 1/4 cup finely chopped sweet red bell pepper

  6. 2 tbsp. sliced green onions

  7. 1 tsp. caraway seed

  8. Bratwurst:

  9. 6 uncooked bratwurst sausages

  10. 3 cups beer(not dark)

  11. 12 whole black peppercorns

  12. 6 bratwurst or hot dog buns, split and toasted

  1. For Sauerkraut Relish:

  2. Combine vinegar and brown sugar in a small saucepan. Heat to a boil, stirring until sugar dissolves. Remove pan from the heat and cool. Stir together sauerkraut, bell pepper, green onions and caraway seed in a medium bowl. Pour vinegar mixture over sauerkraut and stir to blend. Cover and refrigerate at least 3 hours or overnight. Let relish warm to room temperature before serving.

  3. For Bratwurst:

  4. Poke several holes in each bratwurst. Place bratwurst in a large saucepan and add beer and peppercorns. Heat to a boil. Reduce heat, cover and simmer about 20 minutes until bratwurst are no longer pink. Meanwhile, prepare grill. Grill bratwurst on a rack over medium-high heat. Cover and grill bratwurst until skins are golden, turning frequently. Serve bratwurst on toasted buns with sauerkraut relish spooned over.
