  1. 1 tsp. Dijon mustard

  2. 1 egg yolk

  3. 2 Tbsp. red wine vinegar Salt and pepper

  4. 2 Tbsp. peanut oil

  5. 1 Tbsp. olive oil c hopped garlic

  6. 1/2 lb. mushrooms mixture of salad greens - leaf, Bibb, romaine or Boston

  1. For dressing - m ix mustard, egg yolk, vinegar, salt and pepper. Add peanut oil drop by drop, whisking constantly. Add olive oil to taste. Add garlic if desired. Slice mushrooms over greens and add dressing just before serving.
