  7. We have quiche here in South Africa. I make a

  8. crustless quiche - much quicker, easier & lower fat

  9. :). What this means in practice is that, instead of

  10. making pastry for the quiche, add a tablespoon of

  11. flour to your egg & milk custard mixture, beat well to

  12. remove lumps and pour this over the fillings which are

  13. placed in the dish (give the dish a spray of non-stick

  14. baking spray). Cook as normal. During baking, the

  15. flour sinks to the bottom of the custard to form a

  16. mock crust. I have made this using ordinary white &

  17. wholwheat flour, as well as corn & potato flour. - - - - - - - - - - - - - - - - - -
