  1. 3 tablespoons 45ml Olive oil

  2. 1/3 cup 20g / 0.7oz Finely-chopped onion

  3. 1 1/2 cups 240g / 8 1/2oz Long grain rice - uncooked

  4. 1 Chicken broth - (13 3/4 oz)

  5. 3/4 cup 177ml Water

  6. 1 Athenos Crumbled Feta Cheese with

  7. Peppercorn - (8 oz)

  8. 2 teaspoons 10ml Dried oregano leaves

  1. Heat oil in medium saucepan. Add onion; cook and stir 3 to 4 minutes or until tender. Add rice; cook and stir 1 minute.

  2. Stir in broth and water. Bring to boil. Reduce heat to low; cover. Simmer 15 minutes or until liquid is absorbed.

  3. Stir in feta cheese and oregano. Garnish with fresh herbs, if desired.

  4. This recipe yields 4 servings.

  5. Great Substitute: Try 2 tablespoons chopped fresh mint in place of oregano.
