  5. Cornbread:

  6. 2 c Self-rising cornmeal

  7. 1 c Self-rising flour

  8. 1 ts Baking powder

  9. 2 ts Sugar

  10. 3 tb Oil or melted shortening

  11. 2 c Milk or buttermilk --see

  13. Dressing:

  14. 3 Celery stalks -- chopped

  15. 1 lg Onion -- chopped

  16. 2 tb Butter or margarine

  17. 1/4 lb Saltine crackers -- broken

  18. 2 1/2 c Hot chicken broth

  19. 3 cups

  20. If needed)

  21. 2 Eggs -- beaten

  22. 1/2 ts Salt OR 2 chicken boullion

  23. Cubes added To hot chicken broth

  24. 1/2 ts Black pepper --

  25. Taste)

  26. 1. For Cornbread: Mix all ingredients and place in a

  27. 10 pan that has been heated in a

  28. 4 minutes

  29. degrees about 30 or 35 minutes or until lightly

  30. browned. Cool; crumble cornbread into a large bowl.

  31. 2. For Dressing: Saute celery and onion in butter

  32. until tender. Combine cornbread, crackers, sauteed

  33. vegetables, and remaining ingredients, mixing well.

  34. If the dressing doesn't seem moist enough, add some

  35. hot milk - ab out 1 cup. Spoon into a lightly greased

  36. 13x9x2-inch baking pan or casserole dish. Bake at

  37. 25 to 30 minutes until lightly browned.
