  1. Pouding Renverse Des Bluets (Blueberry Upside Down Pudding)

  2. 2 c fresh blueberries or 300g pkg frozen blueberries

  3. 3/4 c sugar

  4. 1 ts lemon rind, grated

  5. 1 1/4 c flour

  6. 1 1/2 ts baking powder

  7. 1/4 ts salt

  8. 1/4 c shortening

  9. 1 egg,beaten

  10. 1 ts vanilla

  11. 2/3 c milk

  12. whipped cream or ice cream, optional

  13. Combine blueberries, 1/4 cup of the sugar and lemon rind in a

  14. buttered 8 inch square baking pan.

  15. In a bowl, combine flour, baking powder and salt. In another bowl,

  16. cream shortening with remaining 1/2 cup sugar until fluffy. Beat

  17. in egg and vanilla. Add dry ingredients alternately with milk,

  18. blending well after each addition and finishing with dry ingredients.

  19. Pour batter over fruit in pan and bake in a preheated 350F oven

  20. for about 40 minutes, or until a tester inserted in centre comes

  21. out clean. Let cool slightly, turn out onto serving plate. Cut in

  22. squares and serve warm or at room temperature, with whipped or ice

  23. cream, if desired. SERVES: 6-8
