  1. 1 3/4 cups whole wheat graham flour

  2. 1/4 cup sugar

  3. 1 tablespoon ground flax seeds

  4. 1 teaspoon baking powder

  5. 1 teaspoon baking soda

  6. 1 teaspoon ground cinnamon

  7. 3/4 teaspoon ginger

  8. 1/4 teaspoon pumpkin spice

  9. 1/2 teaspoon salt

  10. 2/3 cup unsweetened applesauce

  11. 1/2 cup vanilla soymilk

  12. 1/4 cup water

  13. 1 teaspoon vanilla

  14. 1 cup shredded carrot

  15. 1/2 cup raisins

  1. Mix dry ingredients in a large bowl, add the liquid ingredients and stir just long enough to combine. Add the carrots and raisins and stir to combine.

  2. Preheat oven to 400 degrees. Spray muffin pans with non-stick spray. Spoon the batter into the muffin cups. Bake for 15 to 20 minutes, until toothpick comes out clean.
