  1. 3 pounds chicken thigh, no skin, R-T-C -- legs, OR pieces

  2. 1/4 cup hoisin sauce

  3. 1/4 cup plum chutney -- OR plum sauce

  4. 1/4 cup soy sauce

  5. 1 medium piece fresh ginger root -- thinly sliced

  6. 1 lime -- juice of

  7. 3 tablespoons cornstarch

  1. Mix all the ingredients (except chicken) in a bowl. Add chicken; coat well and put it all in a crockpot. Cook 5-6 hours on low. Serve with rice.
