  1. 2 packets unflavored gelatin

  2. 3 cups white grape juice, divided

  3. 1/2 cup medium-dry Amontillado sherry

  4. 1 cup halved seedless red grapes

  5. 3 tablespoons fresh pomegranate seeds

  1. Sprinkle gelatin over 1 cup of grape juice in small saucepan; let stand a few minutes to soften. Stir over low heat until gelatin dissolves completely. Pour gelatin into a large bowl.

  2. Add remaining grape juice and the sherry. Set into a larger bowl of ice and water and stir occasionally until almost set, about 35 to 45 minutes; it should be lumpy and thick.

  3. Fold in grapes and pomegranate seeds gently with a rubber spatula, distributing evenly. Pour into a glass serving dish and chill several hours or until set.
