  1. 4 cups cooked rice

  2. 2 egg s

  3. 4 tablespoon oil

  4. 4 green onion s, including tops, thinly sliced

  5. 1 garlic clove, chopped

  6. 1 chicken breast, cut in small bite size pieces

  7. 4 slices of bacon

  8. 1/2 cup frozen pea s and carrots, thaw

  9. 1/2 cup cashew s

  10. 4 tablespoons soy sauce (kikkoman lite)

  11. 1 tablespoon sesame oil

  1. Refrigerate rice until cold. Rub cold rice with hands until all grains are separated and set aside. In a large wok or wide frying pan cook bacon. Remove bacon when cooked, chop in small bite size pieces and set aside. Cook scrambled egg that has been seasoned with Johnny’s seasoning salt, take out of pan and set aside. Add 1 tablespooon olive oil and cook chicken, remove from pan when cooked and set aside. Add a little olive oil and saute onion add garlic. Add more olive oil and then add the seperated grains of rice and stir fry. Add soy sauce and sesame oil. Add the rest of ingredients. Stir fry to mix ingredients. Taste, add more seasoning if needed.
