  2. CHICKEN PARMIGIANA BREAD

  6. 1 lb Chicken cutlets (6 cutlets)

  7. 2 ea Eggs, beaten

  8. 1 c Milk

  9. 1 c Flour

  10. 1 c Seasoned bread crumbs

  11. 1/2 c Grated Parmesan cheese

  12. --PHASE--

  13. 1 lb Loaf bread or pizza dough

  14. 1 x

  15. 1/2 c Olive oil

  16. 1/4 T Margarine or butter

  17. 2 ea Cloves garlic, minced

  18. 8 oz Mozzarella cheese, sliced th

  19. 2 phase recipe, and makes

  20. 2 loaves...

  21. PHASE1:

  22. 1. Heat oil in frying pan.

  23. 2. Mix grated cheese with seasoned bread crumbs.

  24. 3. For each cutlet: dip in milk, dredge in flour, dip in egg, dredge

  25. in bread crumb mixture.

  26. 4. Fry cutlets until browned on each side.

  27. PHASE 2:

  28. 1. Heat olive oil and margarine until bubbling, then add garlic.

  29. Saute.

  30. 2. Roll out bread dough to make an 11 x 17 rectangle. Slice this in

  31. half. 3. For each half of the dough: brush with garlic mixture, turn on

  32. the diagonal so that dough appears to be diamond-shaped. Lay 1/2

  33. of the cutlets across the long end of the dough, cover with slices

  34. of mozzarella cheese. Bring the two short ends over the top of

  35. the cutlets to seal; brush top of dough with garlic mixture.

  36. 4. Bake at 350 for about 30 minutes, or until bread is golden brown. - - - - - - - - - - - - - - - - - -
