  1. Veg Stock

  2. 1 large onion

  3. 2 large carrots

  4. 2 celery ribs, including a few leaves

  5. 1 bunch scallion, including half the greens

  6. 1 tablespoon olive or vegetable oil

  7. 1 tablespoon nutritional yeast, optional

  8. 8 garlic cloves, peeled and smashed

  9. 8 parsley branches

  10. 6 thyme sprigs or 1/2 teaspoon dried

  11. 2 bay leaves

  12. salt

  13. Scrub the vegetables and chop them roughly into 1-inch chunks.

  14. Heat the oil in a soup pot. Add the vegetables, yeast, garlic and 5 to 10 minutes, stirring

  15. frequently. The more color they get, the richer the flavor of the

  16. 2 teaspoons salt and a

  17. 2 quarts cold water and bring

  18. to a boil. Lower the heat and simmer, uncovered, for 30 minutes.

  19. Strain.
