  1. 8 rashers lean back bacon

  2. 4 thick slices cut from small farmhouse loaf

  3. Butter or margarine for spreading

  4. 2 large tomatoes, thickly sliced

  5. 225g (8oz) mature Cheddar cheese, grated

  6. 60ml (4tbsp) brown ale or milk

  7. 10ml (2tsp) Dijon mustard

  8. Parsley, to garnish

  1. Cook the bacon rashers under a medium preheated grill for 2-3 mins on each side until crisp. Set aside. Lightly toast one side of the bread slices, and then butter the other side and top with sliced tomatoes and bacon rashers.

  2. Mix together the grated cheese, ale or milk and mustard and season with freshly ground black pepper. Spoon this mixture thickly over the bacon rashers.

  3. Cook under a hot grill for 1-2 mins until the cheese mixture is golden and bubbling. Serve garnished with parsley.
