  1. 2 Eggs (large)

  2. 1 tablespoon 15ml Water

  3. 1 tablespoon 15ml Butter or margarine

  4. 1/4 cup 36g / 1 1/3oz Coarsely-chopped cooked shrimp

  5. 3 tablespoons 45ml Shredded Monterey jack cheese

  6. 1 tablespoon 15ml Sliced green onions

  7. 2 tablespoons 30ml Chopped fresh parsley

  8. 1 Shrimp - for garnish

  9. Green onions - for garnish

  1. Combine eggs and water, beating with a wire whisk; set mixture aside.

  2. Heat an 8-inch omelet pan or nonstick skillet over medium heat until hot enough to sizzle a drop of water. Add butter, and rotate pan to coat bottom. Pour egg mixture into pan. As mixture starts to cook, gently lift edges of omelet with a spatula, and tilt pan so that uncooked portion flows underneath.

  3. Sprinkle half of omelet with shrimp and next 3 ingredients, and fold in half. Transfer omelet to a serving plate. Garnish, if desired. Serve immediately.

  4. This recipe yields 1 serving.
