  2. MUSHROOM BOLOGNESE

  7. 1/2 oz Dried shiitake mushrooms

  8. 1/2 lb Button mushrooms

  9. 1 tb Olive oil

  10. 1 md Shallot, chopped fine

  11. 1 md Garlic clove, chopped fine

  12. 1 cn Salt-free whole tomatoes

  13. -(16-ounce)

  14. 1 tb Double-concentrate tomato

  15. -paste

  16. 2 ts Sugar

  17. 1/2 ts Dried oregano

  18. 1/2 ts Dried basil

  19. Cooked pasta of your choice

  20. Put the shiitake mushrooms in a small bowl and add enough warm water to

  21. cover. Let them soak for about 15 minutes, until soft.

  22. Put the shiitakes and the buttom mushrooms in a food processor that has

  23. been fitted with the metal blade. Process until finely chopped.

  24. In a large skillet, heat the olive oil ver moderate heat. Add the shallot

  25. 2 to 3 minutes. Add the chopped

  26. mushrooms and saute, stirring frequently, until all the liquid from the

  27. 10 to

  28. minutes.

  29. Add the tomatoes, breaking them up with your hands. Stir in the tomato

  30. paste, sugar, oregano, and basil. Simmer until the sauce is thick but
