  1. 1/4 cup (60 mL) hard margarine , softened

  2. 1 cup (250 mL) granulated sugar

  3. 2 large egg s

  4. 1 tsp (5 mL) vanilla

  5. 1 cup (250 mL) milk

  6. 1 tbsp (15 mL) instant coffee granules

  7. 2 cups (500 mL) all-purpose flour

  8. 1/2 cup (125 mL) cocoa , sifted

  9. 1 tbsp (15 mL) baking powder

  10. 3/4 tsp (4 mL) salt

  11. 1/4 cup (60 mL) semisweet chocolate chips

  1. Cream margarine and sugar in large bowl. Beat in eggs, 1 at a time. Stir in vanilla, milk and coffee granules.

  2. Stir next 4 ingredients in medium bowl. Add to batter. Stir just to moisten. Turn into greased 9 x 5 x 3 inch (22 x 12.5 x 7.5 cm) loaf pan.

  3. Sprinkle with chocolate chips. Bake in 350°F (175°C) oven for about 1 hour. A wooden pick inserted in center should come out clean. Let stand in pan for 10 minutes before turning out onto rack to cool completely.
