  1. Hot Tomato Relish (recipe)

  2. 1/4 cup olive oil

  3. 1 tablespoon unsalted butter

  4. 1 large clove garlic, minced

  5. 1 pound large raw shrimp, peeled and deveined

  6. 1 tablespoon lemon juice

  7. 2 tablespoons minced Italian parsley

  8. 1/4 teaspoon salt

  9. 1/4 teaspoon black pepper

  10. 4 lemon wedges

  1. Prepare Hot Tomato Relish and set aside. Combine oil and butter in large skillet over very low heat. Add garlic and heat 10 minutes ; do not burn.

  2. Add shrimp. Cook over low heat 5 minutes , turning once, or until shrimp are opaque and cooked through. Stir in lemon juice, parsley, salt and pepper. Serve over Hot Tomato Relish with lemon wedges.
