  1. FRIED GREEN TOMATOES

  2. 1/3 cup fine dry bread crumbs

  3. 1/2 teaspoon sugar

  4. 1/4 teaspoon salt

  5. 1/8 teaspoon pepper

  6. 1/4 cup vegetable oil

  7. 1 lb. (about 3 medium-size) green tomatoes, sliced about 1/2-inch thick

  8. In a small shallow dish, stir together bread crumbs, sugar, salt

  9. and pepper.

  10. In a large skillet, heat oil over medium-high heat. Coat tomato

  11. slices with crumb mixture, patting off excess. Fry a few slices at

  12. 3 to 4 minutes, turning once, or until lightly browned.

  13. Drain on paper towels. Repeat with remaining tomatoes. Makes about 4 servings.
