  1. Bulghur Salad

  2. 4 cups water

  3. 2 cups bulghur wheat

  4. 1 cup chopped pecans

  5. 1 cup dried currants

  6. 4 tablespoons chopped parsley

  7. zest of one or two oranges

  8. salt

  9. pepper to taste

  10. 1 tablespoon olive oil

  11. Combine water and bulghur. Boil, then simmer covered for 25-35

  12. minutes or until water is absorbed. Refrigerate uncovered until

  13. cool. Add all other ingredients. Toss and serve chilled.
