  1. 12 ounces spinach , cooked and well-drained

  2. 1 onion , diced

  3. 2 garlic cloves , minced

  4. 200 g light ricotta cheese

  5. 1/3 cup low-fat plain yogurt

  6. 2 eggs

  7. 2 teaspoons dill weed

  8. 2 teaspoons lemon juice

  9. salt and pepper

  1. Sauté onions and garlic until tender.

  2. Meanwhile, combine ricotta, yogurt, and whisked eggs. Add seasonings, lemon juice, spinach, and onion/garlic mix.

  3. Transfer to greased deep-dish pie plate.

  4. Bake in 375F oven for 40-45 minutes, until set.
