  2. 2 pounds lamb or beef cubes

  3. 1/2 cup oil

  4. 2 onions -- sliced

  5. 2 tablespoons grated fresh ginger

  6. 5 garlic flakes -- minced

  7. 3 bay leaves

  8. 2 teaspoons ground coriander seeds

  9. 1 teaspoon ground cayenne pepper

  10. 1/2 teaspoon cardamom powder

  11. 1 teaspoon garam masala

  12. 1 cup well stirred yogurt

  13. 1/2 cup blanched almonds

  14. 1/4 cup heavy cream

  15. 1 pinch saffron soaked in water

  16. salt to taste

  1. Heat oil in a saucepan, fry onions, ginger, garlic, bay leaves until they are golden. Add meat along with coriander, cayenne pepper, cardamom garam masala, salt and fry for a few minutes. Add the yogurt, reduce the heat to low, cover and cook until the meat is tender. This takes about 30 minutes. Later, add the almonds, cream, saffron with water and cook for another 5 minutes.
