  1. 1 teaspoon virgin olive oil

  2. 1 chicken leg, with skin, back bones, and tips or drumsticks removed

  3. Dash salt

  4. 1/8 teaspoon chili powder

  5. 1/8 teaspoon ground cumin

  6. Dash dried thyme leaves

  7. Dash cayenne pepper

  8. ? teaspoon all-purpose flour

  9. 1 strip each lemon and orange peel, removed with a vegetable peeler

  10. 1 teaspoon chopped fresh ginger (washed but not peeled)

  11. 1 small clove garlic, peeled

  12. º cup sweet apple cider

  13. º cup warm water

  1. Heat the oil in a large saucepan until it is hot but not smoking. Add the chicken leg, and brown it over medium heat, turning occasionally, for 10 to 12 minutes.

  2. Add the rest of the ingredients, bring the mixture to a boil, reduce the heat to low, and cook gently for 15 minutes. Serve with the natural cooking juices.
