  1. 12 cup 20g / 0.7oz Sifted flour

  2. 1/4 teaspoon 1 1/3ml Flour

  3. 1/8 teaspoon 0.6ml Salt

  4. 2 Eggs

  5. 1 teaspoon 5ml Vanilla

  6. 3/4 cup 148g / 5 1/5oz Sugar

  7. 1 tablespoon 15ml Butter, melted

  8. 2 66666666667/100000000000 cups 248g / 8.7oz Flaked coconut

  1. Recipe Instructions Sift together flour, baking powder and salt; set aside. Beat together eggs and vanilla in bowl until foamy, using electric mixer at high speed. Gradually beat in sugar. Continue beating at high speed until thick and lemon-colored. Blend in butter. Gradually add dry ingredients to egg mixture, using electric mixer at low speed. Fold in coconut. Drop mixture by rounded teaspoonfuls, about 2 inches apart, on greased baking sheets. Bake in 325 degree oven 15 minutes, or until golden brown around the edges. Remove from baking sheets, cool on racks. Makes 2 1/2 dozen.
